Beef Pie A La Medallion Recipe
The beef pie a la madelon is a peppy and savory beef pie made with cooked and cubed beef. Baked in the oven with gravy cooked vegetables like onions, green peppers and green beans, the beef pie is topped with biscuit dough and baked to a rich brown.
Ingredients
2 tbsp. butter
14 c. chopped onion
1/4 c. chopped green pepper
2 tbsp. flour
1 c. milk
1 c. gravy or 1 can Franco American beef gravy
1 tsp. Worcestershire sauce
1 tsp. salt
1/8 tsp. pepper
1 c. cooked carrots Leftover cooked peas, corn or green beans
1 1/2 c. cooked cubed beef
Biscuit dough for 8 dropped biscuits
Directions
Melt butter; saute onion slightly and saute green pepper until soft.
Add flour and stir in milk.
Stir until thickened.
Add gravy, seasonings and remaining vegetables.
Add meat.
Place in a buttered casserole and top with biscuit dough, dropping about 8 large spoonfuls from tablespoon.
Bake 30 to 35 minutes at 400 degrees or until biscuits are brown and well done.
