Beef Malaga Recipe
Ingredients
| Olive oil | 2 Tablespoon | |
| Top round steak | 2 Pound | |
| Onion | 1 Medium | |
| Red wine | 1 1⁄2 Cup (24 tbs) | |
| Mushroom soup | 1⁄2 Can (5 oz) | |
| Grated sharp cheddar cheese | 1⁄2 Cup (8 tbs) | |
| Salt | 1 Teaspoon | |
| Oregano | 2 Pinch | |
| Thyme | 1 Pinch | |
| Garlic | 1 Clove (5 gm), minced | |
| Mushrooms/1 large. can b & b mushrooms | 1⁄2 Pound | |
| Sour cream | 1⁄2 Pint |

Directions
Brown a few chunks at a time in olive oil, rapidly, so that they do not stew.
Add chopped onion and brown; add red table wine, scraping bottom of pan well.
Add remaining ingredients, except mushrooms and sour cream.
Simmer for 2 1/2 hours, covered.
Add mushrooms.
If using fresh mushrooms, soak in 1 cup water, slice & add water; if using canned, use liquid also.
Simmer 30 minutes longer.
Just before serving, add sour cream.
Stir to mix and warm.
Serve with rice.
