Beef Enchiladas Recipe

Ingredients
| Extra lean ground beef | 1 Pound (Sausage Meat May Be Substituted For, Half Of The Beef) | |
| Tomato sauce | 8 Ounce | |
| Salt | 1 Teaspoon | |
| Onion | 1 Medium, chopped | |
| Raisins | 1⁄2 Cup (8 tbs) | |
| Chopped roasted and peeled green chilies | 3 Tablespoon | |
| Canned tomato sauce | 8 Ounce | |
| Canned mild enchilada sauce | 10 Ounce | |
| Canned mild enchilada sauce | 10 Ounce | |
| Cheddar cheese | 2 Ounce, shredded | |
| Cheddar cheese | 2 Ounce, shredded |
Directions
Brown the beef in a skillet and drain well.
Add the tomato and enchilada sauces and salt.
Simmer 3 to 4 minutes, until thickened.
Place some of the meat mixture down the center of each tortilla.
Sprinkle with chopped onions, raisins, chilies, and cheese.
Roll and place, flap side down, in slow cooker.
Combine the remaining sauces and pour over the rolled tortillas.
Top with cheese.
Cover and cook on low about 1 to 1 1/2 hours or until heated through.
Serve at once with a cool beverage and a tossed salad.
