Beef Enchilada Recipe
This beef enchilada recipe is one of my favorite meal ideas. This one-dish delight I find really easy and quick to make after a long day when I am not left with much energy. You could also make the ground beef mixture in advance so that it is even easier and faster for you after a busy day at work.

Ingredients
½ lb ground beef
1 can readymade enchilada sauce
1 cup finely chopped onions
3 cloves garlic (minced or finely chopped) (I like the taste and flavor of garlics, you could reduce the quanitity of garlic depending on your individual taste)
½ tsp salt
½ tsp crushed black pepper
4-5 tortillas
½ cup grated parmesan cheese
¼ cup grated cheddar cheese
1 tbsp of cooking oil
Directions
Take a skillet and add in a tbsp of cooking oil. Add the onions and garlic and sauté. When the onions are done add in the ground beef , salt and pepper. Sauté till the beef is nice and brown. Add in the half the enchilada sauce and mix well till all ingredients are well-blended. Keep aside.
Take the individual tortillas and spread the enchilada sauce on each of them. Add in a spoonful of the mixture in each of them. Lay out the tortillas in a baking dish. Pour any remaining sauce over it. Sprinkle the grated cheese over it. Bake in a pre-heated oven at 350 degrees for 10-15 minutes. Take out sprinkle some more of the cheese and Enchilada sauce (if you like a little extra liquid). Serve.
