Ingredients
1 medium-sized eggplant, pared and cut in1/2 in. cubes
1 lb. lean ground beef
1/2 cup soft bread crumbs
1/4 cup shredded Parmesan cheese
2 tablespoons chopped parsley
1 clove garlic, minced
3/4 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons water
4 eggs, beaten
6 tablespoons olive oil
1 clove garlic
1 can (28 oz.) Italian-style tomatoes, sieved
1 tablespoon chopped parsley
1 teaspoon oregano
3/4 teaspoon basil
3/4 teaspoon salt
1/8 teaspoon black pepper
Directions
Put eggplant into a heavy saucepan with just enough boiling salted water to cover bottom of pan; cover tightly and cook until just tender, about 3 minutes.
Drain thoroughly in a colander, discarding the liquid.
Lightly but thoroughly mix ground beef with the bread crumbs, cheese, 2 tablespoons parsley,minced garlic, and a mixture of 3/4 teaspoon salt and 1/4 teaspoon pepper.
Mix in the water, eggs, and the eggplant.
Shape mixture into 8 patties.
Heat olive oil in a heavy skillet; add patties and brown on both sides over medium heat.
Transfer patties to a shallow baking dish; set aside.
Add garlic to oil in skillet and heat 1 minute.
Remove garlic and stir in a mixture of the remaining ingredients.
Simmer about 10 minutes.
Pour sauce over patties in baking dish and set in a 375°F oven 15 minutes, or until thoroughly heated.
