Beef Curry Recipe

Ingredients
| Stewing beef | 1 1/2 Pound | |
| Clarified butter | 2 Tablespoon | |
| Onion | 1 Large, chopped | |
| Curry powder | 3 Tablespoon | |
| Garlic | 2 Clove (5gm), crushed | |
| 1 x 1-inch piece fresh ginger root, grated, or 1/2 teaspoon ground ginger | ||
| 1/2 cup beef stock or water | ||
| Coconut milk | 1/2 Cup (16 tbs) | |
| I 1/2 teaspoons salt | ||
Directions
Remove excess fat from beef and cut into 1-inch cubes.
Heat ghee or oil in a heavy saucepan and saute onion until soft.
Add curry powder, crushed garlic and ginger and fry gently, stirring mixture, for 5 minutes.
Increase heat, add beef and cook for 3-4 minutes, stirring well during cooking.
Add stock or water, coconut milk and salt, cover pan tightly and simmer gently, stirring occasionally, for 1 1/2 hours or until meat is tender and liquor has thickened.
Serve hot.
