Beef Birds Spiedini Recipe
Ingredients
1 pound thinly sliced steak or roast cut 1/4 inch thick
Salt, garlic salt and fresh ground pepper to taste
1/2 teaspoon crumbled dried oregano
1 ounce very thinly sliced proscuitto or Black Forest ham
2 ounces Gruyere Samsoe or Fontinella cheese
Directions
Cut meat slices into 3 by 5 inch rectangles.
Sprinkle with salt, garlic salt, pepper, and oregano.
Lay a small piece of proscuitto and cheese on each meat strip and roll up.
Skewer.
Repeat, skewering about 4 meat rolls on each skewer.
Barbecue or broil over hot coals, turning.
Contains about 270 calories per serving.
Note: A roast such as a sirloin tip, rump, or cross rib is excellent for slicing into wafer thin steak strips.
As an aid, place the roast in the freezer for about 1 hour to firm it up before slicing.
