 500glean fillet or rump steak
 Soy sauce1 Tablespoon
 1 tablespoon hoisin sauce (optional)
 1 tablespoon tomatopaste
 Cornflour1/2 Tablespoon
 Vegetable oil5 Tablespoon
 1/4easpoons sugar
 2 tablespoons Chinese salted black beans
 2 medium red or green peppers, scored and seeded
 Grated ginger1 Teaspoon
 3 tablespoons Chinese wine or dry sherry

Directions

Slice beef thinly across the grain and cut into finger-length strips. Mix soy sauce, hoisin sauce, tomato paste, cornflour, 1 tablespoon oil and sugar. Add beef, turn to coat the strips all over, and leave 15 minutes. Meantime, soak beans in cold water for 15 minutes. Cut peppers into 4cm squares. Heat wok then add remaining oil over high heat. When it begins to give off a haze, add ginger and drained black beans and stir-fry 30 seconds. Add beef and stir-fry 2 minutes. Add peppers, sprinkle with wine or sherry and stir-fry 1 minute more. Serve at once
