Beef And Blue Cheese Crepes Recipe

Ingredients
1 pound ground beef (ground chuck or ground round)
1/2 cup chopped onions
2 tablespoons vegetable oil
1/2 cup finely chopped olives
1/2 cup blue cheese (or Roquefort)
1 cup dairy sour cream
1 egg, beaten
Salt and pepper to taste
12 crepes
2 tablespoons melted butter
Directions
Brown beef and onions in hot oil.
Drain Add olives.
Crumble cheese and mix with sour cream and egg.
Mix into beef mixture and cook over low heat for 5 minutes, stirring occasionally.
Season to taste.
Cool.
Place 2 spoonfuls of the beef mixture along the center of each crepe; roll.
Place in a greased baking dish with seam side down.
Brush tops of crepes with butter and bake at 375°F for 20 minutes.
