1 beef tongue

Directions

Place tongue in large kettle; cover with water.
Add 1 tsp (5 mL) salt per qt. (L) of water.
Bring to boil; reduce heat and simmer 3 1/2 to 4 hours.
Remove tongue; immediately place in ice water.
Allow to soak 5 minutes.
Remove skin and trim.
Slice thin.
Use for sandwiches.
