Beef Tips In Tomato Chile Sauce Recipe
Ingredients
| 1-1/2 lbs. tender, boneless beef, cubed | ||
| Vegetable oil | 2 Tablespoon | |
| Onion | 1 , sliced | |
| 3 chiles poblano, roasted, peeled, seeded & diced | ||
| Beef broth | 2/3 Cup (16 tbs) | |
| Tomato-Chile sauce | ||
| .3 tomatoes (1-1/2 lbs), peeled & diced | ||
| 4 chiles serranos, diced | ||
| Onion | 1/2 , chopped (Tomato-Chile Sauce:) | |
| Garlic | 2 Clove (5gm), minced (Tomato-Chile Sauce:) | |
| Vegetable oil | 1 Tablespoon (Tomato-Chile Sauce:) | |
| Salt | To Taste (Tomato-Chile Sauce:) | |
Directions
Heat oil in skillet, add beef, brown and cook to about medium-rare.
Remove from skillet and add the onion, chilies, broth and tomato-chile sauce.
Simmer 10 minutes.
Return meat to skillet, heat and serve.
Sauce: Place the tomatoes, chilies, onion and garlic in a blender.
Process until almost pureed.
Heat the oil in a skillet and add the sauce.
Cook about 5 minutes until slightly thickened.
Season with salt.
