Beef Stuffed Peppers Recipe
Beef stuffed peppers are prepared with green peppers and a beef and vegetable filling. Prepared with cooked beef along with onions and corn, the mixture is flavored with chili powder and tomato sauce. Seasoned and baked with a cheese topping, the beef stuffed peppers are great as sides in a meal.
Ingredients
| Green peppers | 4 Large | |
| Ground beef | 1 pound | |
| Onion | 1 Medium, chopped | |
| Tomato sauce | 1 Can (10oz) | |
| Whole kernel corn | 1 Can (10oz), drained | |
| Chili powder | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Shredded Cheddar cheese | 1/2 Cup (16 tbs) |
Directions
Cut off tops of green peppers; remove centers and discard.
Cook peppers 5 minutes in boiling water; drain peppers, and set aside.
Cook ground beef and onion in a large skillet until meat is browned, stirring to crumble meat; drain well.
Stir in tomato sauce and next 3 ingredients.
Stuff peppers with meat mixture, and place in a baking dish.
Bake at 350° for 15 minutes.
Sprinkle tops of peppers with cheese; bake an additional 5 minutes.
