Homemade Beef Stock Recipe
Ingredients
| 500 g/1 lb shin beef, diced | ||
| 500 g/1 ib marrow bones, cut into pieces | ||
| Onion | 1 , quartered | |
| 2 carrots, roughly chopped | ||
| 4 stalks celery, roughly chopped | ||
| Fresh herbs of your choice | ||
| Peppercorns | 4 | |
| 3 liters/5 pt cold wate | ||
Directions
1. Place beef, bones, onion, carrots, celery, herbs, peppercorns and water in a large saucepan. Bring to the boil over a medium heat, reduce heat and simmer, stirring occasionally, for 2 hours.
2. Strain stock and refrigerate overnight.
3. Skim fat from surface of stock and use as required or freeze.
