Beef Stick Recipe
Ingredients
| Hamburger | 5 Pound (Cheap Variety) | |
| Morton's tender quick salt | 5 Teaspoon | |
| Coarse ground pepper | 2 1⁄2 Teaspoon | |
| Whole mustard seed | 2 1⁄2 Teaspoon | |
| Garlic salt | 2 1⁄2 Teaspoon | |
| Hickory smoked salt | 2 Teaspoon |
Directions
Mix spices together and then mix gradually with meat using hands.
Chill in refrigerator overnight.
Second day mix again and return to refrigerator.
On third day form into 4-5 rolls and shape into rolls like salami.
Put on broiler rack in pan on bottom rack of oven and cook 8 hours at 140°.
Turn every 2 hours.
Will form its own crust.
Age 3 more days in refrigerator
