Beef Soup With Meatballs Recipe

Ingredients
3 small hot green peppers, fresh
1/2 pound ground beef
1/2 pound lean ground pork
2 cloves garlic, crushed
1 teaspoon salt
1/4 cup tomato sauce
1 teaspoon chili powder
1 teaspoon cumin, ground
1 tablespoon parsley, chopped
1/2 cup bread crumbs
2 eggs, beaten
3 tablespoons butter for browning
6 cups hot Basic Brown Soup Stock
1/2 cup dry red wine
Directions
Remove the seeds and chop the peppers.
Mix all ingredients except the butter, soup stock, and the wine.
Blend well.
Form the meat mixture into 48 meatballs and brown them in the butter.
Add the meatballs to the soup stock along with the wine.
Simmer 10 minutes before serving.
The soup may need additional salt.
For a full meal serve this soup with a large hearty salad, such as Pea Salad with Bacon
Either a white or a red wine will do well.
