Beef Shank and Bean Trio Recipe
Ingredients
| Lima or Great Northern beans - 4 ounces | ||
| Red pinto beans - 4 ounces | ||
| Water | 3 Cup (16 tbs) | |
| Beef shanks - 3 (2 pounds), cross cuts | ||
| Medium onion - 1, coarsely chopped | ||
| Salt | 2 Teaspoon | |
| Sugar | 2 Teaspoon | |
| Pepper red | 1/8 Teaspoon, crushed | |
| Tomatoes | 16 Can (10oz) | |
| Flour | 2 Tablespoon | |
| Green beans - 16-ounce can, drained | ||
Directions
GETTING READY
1. Place beans in a Dutch oven and add water.
2. Soak beans overnight or quick soak.
3. Do not drain.
MAKING:
4. Place shanks in pot and push them deep to cover.
5. Add onion, salt, sugar, and red pepper.
6. Cover and simmer 2 ½ hours.
7. Drain tomatoes, reserving liquid.
8. Stir liquid into flour to blend.
9. Gradually add flour mixture to beans and stir until thickened.
10. Add tomatoes and green beans and continue cooking 15 minutes more.
SERVING:
11. Serve beef shank and bean trio immediately.
