1/2 cup buttermilk
 
3 tablespoons reduced calorie mayonnaise or salad dressing
 
1 tablespoon snipped fresh basil or 1 teaspoon dried basil, crushed
 
1 tablespoon lemon juice
 
1 teaspoon sugar
 
Dash pepper
 
6 cups torn mixed greens
 
8 ounces lean cooked beef, cut into thin strips
 
1 small parsnip, thinly sliced
 
1 medium carrot, thinly sliced
 
1/2. of a small zucchini, sliced
 
1/2 cup broccoli flowerets
 
1/2 of a 16 ounce can julienne beets, well drained

Directions

For the dressing, in a small mixing bowl stir together buttermilk, mayonnaise or salad dressing, basil, lemon juice, sugar, and pepper.
Cover and chill in the refrigerator.
For salad, toss together the mixed greens, beef, parsnip, carrot, zucchini, and broccoli.
Add the chilled dressing and toss to coat.
Spoon onto 4 individual serving plates.
Garnish with drained beets.
