Beef Salad L Orange Recipe
Ingredients
| 2 tablespoons plus | ||
| 2 teaspoons in all | ||
| White vinegar | 2 Tablespoon | |
| Onion | 1/2 Cup (16 tbs), chopped | |
| Garlic | 1 Teaspoon, minced | |
| 1 pound beef tenderloin or other tender cut, cut into narrow strips | ||
| Dairy sour cream | 1 Cup (16 tbs) | |
| Mayonnaise | 1/2 Cup (16 tbs) | |
| Orange marmalade | 2 Tablespoon | |
| Prepared horseradish | 2 Teaspoon | |
| 1 teaspoon Creole mustard or brown mustard | ||
| 2 quarts iceberg lettuce, torn into bite-size pieces | ||
| Zucchini | 1 Cup (16 tbs), chopped | |
| Yellow squash | 1 Cup (16 tbs), chopped | |
| Green bell peppers | 1 Cup (16 tbs), chopped | |
| Celery | 1 Cup (16 tbs), chopped | |
| Carrot | 1 Cup (16 tbs), chopped | |
Directions
In medium mixing bowl, make paste with 2 tablespoons of the Meat Magic and vinegar.
Stir in onion and garlic and mix well.
Add beef strips and mix well with your hands to evenly coat.
Transfer to plastic bag, seal and refrigerate overnight.
Remove beef strips from refrigerator and let come to room temperature while you make the dressing.
Preheat broiler.
In small mixing bowl, make the dressing by thoroughly combining sour cream, mayonnaise, orange marmalade, horseradish, mustard and the remaining Meat Magic.
Reserve.
Place seasoned beef strips in a single layer in broiler pan.
Broil about 6 minutes or until well browned; turn strips.
Broil about 3 minutes or until well browned.
Remove from broiler and set aside.
