 Egg1 , beaten
 1 tbsp. pickle relish
 All purpose flour1 Cup (16 tbs)
 1 cup hot water or beef stock
 Parsley

Directions

Pound meat until it is about three-eighths inch thick, then cut into pieces, each about 3 by 4 inches.
Season with salt and pepper.
In a small skillet, saute onion in 1 tbsp.of the butter until onion is transparent.
Add breadcrumbs, parsley, egg, salt, pepper, and relish.
Remove from heat and mix well.
Spread about 2 tbsp.of the onion mixture on each meat slice and roll meat tightly.
Tie securely with string or fasten with toothpicks.
Roll meat rolls in flour.
In a large skillet, melt remaining butter.
Add meat rolls and saute until brown, turning to cook all sides.
Add hot water or beef stock and simmer for about 1 hour and 30 minutes.
With a slotted spoon, lift meat rolls from the skillet.
Remove string or toothpicks and arrange rolls on a serving platter.
Pour gravy over meat, garnish with parsley, and serve immediately.
