Ingredients

 
1 lb. topside beef, cut in thin slices
 
1/4 pt. red wine
 
1/4 pt. stock
 
4 bacon rashers
 
2 Tbs. tomato paste
 
Fresh sage leaves or dried sage
 
Salt and pepper
 
2 oz. fat or oil

Directions

Cut the beef slices in 8-12 pieces and cut bacon pieces slightly smaller.
Put a piece of bacon on each slice of beef and a sage leaf or pinch of dried sage on top.
Roll it up and secure with string or a cocktail stick.
Heat fat or oil and fry the rolls brown.
Put the rolls in a casserole with the wine, stock, tomato paste blended with 2 Tbs. water, and salt and pepper to taste.
Cover and simmer until the meat is tender, about 3/4 hr.
Remove strings before serving.
