Beef Risotto Recipe
Ingredients
| Cooking oil | 10 | |
| Beef | 450 , minced | |
| Onion | 1 Large, chopped | |
| Chicken stock | 550 | |
| Garlic | 1 Clove (5gm), crushed | |
| Mixed herbs | 5 | |
| Can tomatoes, including juice 425g | ||
| Bay leaf | 1 | |
| Peppers | 30 To taste, dried | |
| Sherry | 30 | |
| Green peppers | 1 To taste, deseeded | |
| Button mushrooms | 100 , sliced | |
| Easy cook long grain rice 100g | ||
Directions
Heat the oil in a pan.
Add the meat and fry lightly.
Add the onion and continue to fry until golden brown.
Stir in the stock, garlic, herbs, canned tomatoes, bay leaf and dried peppers.
Bring to the boil.
Add the sherry and transfer to the Slo cooker.
Cook for recommended time.
Stir in the green pepper, mushrooms and rice.
Cook for recommended time.
Add the meat and fry lightly.
