Beef Ragout Recipe
First of all let me thank my neighbor for sharing this excellent Beef Ragout recipe. I tried this recipe for Beef Ragout the other day and was totally bowled over. The goodness of Beef makes Beef Ragout a great treat. The Beef Ragout is one of the most popular creations of the French Cuisine. This is an ideal dish to include in today's menu.
Ingredients
1/2 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
3 pounds beef chuck, cubed
1/4 cup vegetable oil
1 medium yellow onion, chopped
3 stalks celery, chopped
1 green pepper, chopped
2 cloves garlic, minced
2 cans (10 1/2 ounces) condensed beef consomme, undiluted
1 can (1 pound) tomatoes
1 can (6 ounces) tomato paste
2 tablespoons parsley, chopped
2 teaspoons paprika
2 teaspoons Worcestershire sauce
Directions
1. Mix flour, salt, and pepper. Dredge beef cubes. Reserve remaining flour mixture.
2. Heat 3 tablespoons oil in a heavy frying pan. Add beef cubes a third at a time. Remove as browned.
3. Add more oil if necessary and saute onion, celery, garlic, and green pepper until tender. Remove from heat.
4. Stir in 2 tablespoons flour until well blended. Gradually stir in beef consomme. Add tomatoes, tomato paste, parsley, paprika, and Worcestershire sauce. Bring to a boil stirring constantly.
5. Add beef to a casserole and pour in sauce. Simmer covered 2 1/2 hours until meat is tender.
