Beef Ponte Vecchio Recipe

Ingredients
4 slices bacon
2 pounds lean beef, cubed
1/4 cup flour
1 1/2 teaspoons salt
1 cup beef bouillon
3/4 cup light rum
1 1/2 cups sliced carrots
8 small white onions
1/8 teaspoon thyme
3 whole cloves
1 bay leaf
3 crushed peppercorns
Directions
Cut bacon slices in quarters and fry until done but not crisp.
Place in bottom of 2-quart casserole.
Sprinkle beef with flour and salt and brown in bacon fat, turning to brown all sides.
Add with remaining ingredients to bacon in casserole.
Cover and bake in a 300° F.oven for about 2 hours or until beef is tender.
