Beef Polenta Recipe

Ingredients
1 3/4 cups (430 ml) water
1/2 cup (125ml) commeal
2 tbsp (30 ml) vegetable oil
1 cup (250 ml) strong Cheddar cheese, grated
1 garlic clove, finely sliced
1/3 cup (80 ml) onions, finely sliced
1/3 cup (80 ml) carrots, sliced
1/3 cup (80 ml) celery, chopped
1 lb (450 g) ground beef
19 oz (540 ml) canned tomatoes, drained and chopped
2 tbsp (30 ml) tomato paste
2 tsp (10 ml) basil
Salt and pepper
1 tbsp (15 ml) chopped parsley
Grated cheese
Directions
– In a 12-cup (3 L) microwave-safe dish, mix together water, cornmeal and oil; covei and cook in microwave at HIGH for 5 minutes. Stir and cook 3 minutes longer or until liquid is completely absorbed. Spread cheese evenly over cornmeal.
– In an 8-cup (2 L) microwave-safe, combine garlic, onions, carrots and celery, Cover and cook in microwave at HIGH 3 to 5 minutes.
– Add ground beef and cook 5 minutes longer or until meat is done.
– Break ground beef apart with a fork. Add tomatoes, tomato paste and basil, cover and cook in microwave at HIGH for 10 minutes or until mixture has thickened. Stir once or twice during cooking process. Season with salt and pepper.
– Pour mixture over polenta, sprinkle with parsley and grated cheese.
