Beef Ole Recipe
Ingredients
1 onion, chopped
2 garlic cloves
1/2 cup shallots, chopped
1/4 cup soy sauce
1/4 tsp pepper
2 lbs beef, diced
3 tbsp oil
1/3 cup brown sugar water
2-4 whole chili peppers, chopped
2 green bell peppers, diced
6 large carrots, cut into sticks
4 cups tomato juice
3 cups quick cooking rice
Directions
In a bowl, mix first 5 ingredients.
Add beef cubes.
Marinate in refrigerator 30 minutes, stirring from time to time.
Remove beef cubes from refrigerator.
Drain.
In a Dutch oven, heat oil.
Sprinkle with brown sugar, mixing well.
Brown beef cubes all over.
Add enough water to cover meat.
Fold in remaining ingredients, except rice.
Cover.
Cook 1 hour or until beef is tender.
Add rice.
Cover.
Simmer 15 minutes.
Add beef cubes.
