Ingredients

 Lean Beef Steak - 12 oz 350g, cut into 2 inch, 5 cm slices
 Light soy sauce2 Teaspoon
 Dry Sherry OR Rice Wine - 2 teaspoons
 Cornflour1 Teaspoon
 Oil1 1/2 Tablespoon
 Chicken Stock - 2 1/2 fl oz 70ml
 Oyster sauce1 1/2 Tablespoon
 Cornflour - 1 teaspoon, blended with 1 teaspoon water garnish
 Spring onions1 1/2 Tablespoon, finely chopped

Directions

GETTING READY
1. In a bowl put the beef add the soy sauce, sherry or rice wine and cornflour and let it marinade for 20 minutes.

MAKING
2. In a wok heat oil until it is very hot and almost smoking, add the beef slices and stir fry.
3. Remove and drain.
4. Wipe the wok and re-heat it over high heat and add the chicken stock and oyster sauce.
5. Boil this liquid, add the cornflour mixture and simmer for 2 minutes.
6. Put in the beef and coat all the slices thoroughly with the sauce.

SERVING
7. On a serving platter turn the mixture, garnish with the spring onions and serve hot.
