 3 pounds chuck or round of beef
 3 tablespoons special oil
 Onions2 Cup (16 tbs), sliced
 Salt3/4 Teaspoon
 Ground black pepper1/2 Teaspoon
 Thyme1/8 Teaspoon
 Beer1/2 Cup (16 tbs)
 Sugar1 Tablespoon
 Vinegar1 Tablespoon

Directions

Trim all the fat from the beef; cut Into 2-inch cubes.
Heat the oil in a Dutch oven or heavy saucepan; brown the onions and beef in it.
Add the salt, pepper, thyme, beer, sugar and vinegar.
Cover and cook over low heat 1-1/2 hours or until meat is tender.
Skim the fat.
