Ingredients

 
Boneless chuck - 2 1/2 lbs.
 
Red wine - 2 cups
 
Oil - 1 tbsp
 
Vinegar - 1 tsp.
 
Garlic - 2 cloves , crushed
 
Small onion - 1, sliced
 
Bay leaves - 4
 
Thyme - 1/2 tsp.
 
Parsley - 3 sprigs
 
Peppercorns - 10
 
Butter - 3 tbsp
 
Salt
 
Pepper
 
Ginger - pinch
 
Cornstarch - 1 tsp.
 
Butter - 1 tbsp

Directions

GETTING READY
1 In a deep glass or enamel bowl combine red wine, vinegar, garlic, small onion, bay leaves, thyme, parsley, peppercorns.
2 Place the beef in the bowl and cover with a lid or aluminum foil.
3 Allow the beef to marinate for 12 hours, turning twice.
4 Remove and dry beef on paper towels. reserving the marinade.
5 Preheat the oven to 400 F.

MAKING
6 In a casserole, heat butter and oil.
7 Add in the meat and brown.
8 Strain marinade and add liquid to the beef.
9 Place the casserole in the oven and cook for 2 hours, until the beef is tender.
10 Remove the beef from the oven and keep warm on a plate.
11 Transfer the marinade to a pan.
12 Boil the marinade over high heat, until reduced to 1 cup.
13 Meanwhile, in a small bowl, dissolve cornstarch in water.
14 Stir into the marinade, mixing constantly.
15 Season with ginger, salt and pepper.
16 Swirl in 1 tbsp butter.

SERVING
17 Slice the meat.
18 On a serving dish, arrange the beef slices and pour the sauce over it.
19 Serve at once.
