Ingredients
3 pounds beef heart
1 1/2 cups apple cider
1 cup Chicken Stock
2 medium-size onions, chopped
1 tablespoon tamari or soy sauce
Parsley sprigs (garnish)
Cherry tomatoes (garnish)
Directions
Trim off visible fat from the beef heart and cut out large veins if this has not already been done by the butcher.
Place the heart with the cider, stock, and onions in a deep, 1 1/2-quart ovenproof casserole.
Cover and bake at 325° for 2 1/2 hours.
Remove the heart from the casserole and strain the cooking liquid.
Puree the onions in a blender on medium speed with one cup of liquid to make a gravy.
Season with the tamari.
Thinly slice the heart and arrange the slices on a serving platter.
Spoon the gravy over top.
Garnish the platter with parsley and cherry tomatoes, if desired.
