Beef Hawaiian Recipe
Ingredients
2 tablespoons cooking oil
2 1/2 to 2 3/4-lb. boneless beef round steak, cut into thin strips
1 tablespoon soy sauce
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup packed brown sugar
1/4 cup vinegar
3 tablespoons cornstarch
1 can (13 1/4 oz.) pineapple chunks, undrained
1 medium green pepper, cut into thin strips
2 tomatoes, cut into wedges
Directions
1. Measure oil in 2-quart glass casserole.
2. Microwave on HIGH for 2 to 3 minutes or until hot. Stir in beef and continue cooking on HIGH for about 6 minutes or until no longer pink. Stir in soy sauce, salt, pepper, brown sugar and vinegar. Cover with glass lid or plastic wrap.
3. Microwave on SIMMER for 20 minutes. Blend cornstarch and pineapple juice in 2-cup measure. Stir into meat mixture. Mix in pineapple chunks, green pepper and tomatoes. Recover and continue cooking on SIMMER for 8 to 10 minutes or until hot and meat is fork tender. Let stand, covered, 5 minutes before serving.
