Beef Curry With Eggs Recipe
Ingredients
| Butter | 2 Ounce | |
| Onion | 1 Large, chopped | |
| Curry powder | 1 Tablespoon | |
| Stewing beef | 1 Pound, cut into strips | |
| Flour | 2 Ounce | |
| Mixed dried fruit | 2 Ounce | |
| 1 large cooking apple, peeled and diced | ||
| Beef Stock | 1 Pint | |
| 6 oz. long-grain rice, soaked for 30 minutes and drained | ||
| Hard-boiled eggs | 2 , hardboiled | |
Directions
Melt the butter in a large pan and fry the onion until tender.
Stir in the curry powder and cook for 1 minute.
Coat the strips of meat with flour, add to the pan and fry until the meat is evenly browned.
Add the dried fruit and apple.
Stir in the stock, bring to the boil and simmer, covered, for about 1 1/2 hours, or until the meat is tender.
Meanwhile cook the rice in 3/4 pint (2 cups) boiling salted water, drain it and dry it off in a warm oven.
Arrange the rice round the meat in a serving dish and garnish with the sliced eggs
