Ingredients
1/2 lb. ground beef
3/4 lb. fresh okra or 1 (10-ounce)package frozen okra, thawed
1 small onion, chopped
1 garlic clove, minced
5 cups chicken broth
4 medium tomatoes, chopped
1 cup whole-kernel corn, fresh or frozen
3 parsley sprigs
1 bay leaf
1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried leaf thyme
1/8 teaspoon ground red pepper (optional)
Salt and freshly ground pepper
Chopped fresh parsley
Lemon wedges
Directions
Brown ground beef in medium skillet.
Drain.
Add okra, onions and garlic; cook 10 minutes.
Stir in broth, tomatoes, corn, parsley sprigs, bay leaf, thyme and ground red pepper.
Season with salt and pepper to taste.
Bring to boil.
Reduce heat to low; cover.
Simmer 20 minutes or until vegetables are tender, stirring occasionally.
Discard parsley sprigs and bay leaf.
Ladle into bowls.
Sprinkle with chopped parsley.
