Beef Consomme Brimoise Recipe
Ingredients
10 oz (284 ml) canned beef consomme
1 cup (250 ml) water
2 tbsp (30 ml) port, sherry or red wine
2 tbsp (30 ml) carrots, finely chopped
2 tbsp (30 ml) turnip, finely chopped
2 tbsp (30 ml) leek white, finely chopped
2 tbsp (30 ml) leek stalk, finely chopped
1/4 cup (60 ml) cooked beef, very finely diced
Salt and pepper
Directions
– In a saucepan, bring consomme, water and wine to a boil. Add other ingredients, cover and simmer for 1 minute. Turn off heat, adjust seasoning and serve.
