16 small white onions, peeled (about 1 pound)
6 slices lean bacon, diced
1/4 cup (1/8 lb.) butter or margarine
4 pounds beef chuck, cut in 1 1/2 inch cubes, fat trimmed off
1/4 cup brandy (optional)
1 1/2 teaspoons salt
1/4 teaspoon freshly ground pepper
2 cups Burgundy or other dry red wine
2 whole cloves garlic, peeled
2 cups small whole, or sliced, fresh mushrooms
1 1/2 cups water
Bouquet garni:
Tie in a piece of cheesecloth
1 or 2 sprigs parsley
1 celery top
1 quartered carrot
a bay leaf and a sprig of thyme (or 1 teaspoon dried thyme)
6 tablespoons flour
1/2 cup cold water

How to make Beef Burgundy

Brown onions with bacon and butter in a Dutch oven; remove onions and bacon with a slotted spoon; reserve.
Add meat to the pan and brown well on all sides.
If desired, pour brandy over the beef and set aflame, tilting pan to keep the flame going as long as possible.
Sprinkle meat with the salt and pepper.
Add the Burgundy, garlic, mushrooms, the 1 1/2 cups water, bouquet garni, onions, and bacon.
Cover and simmer about 1 1/2 hours, or until the meat is tender.
