3 to 4 lb. beef soup bones or chuck roast
 
1/2 stalk celery, chopped
 
3 carrots, sliced
 
1 med onion, chopped
 
1/2 green pepper, chopped
 
2 bay leaves
 
1/2 tsp each thyme, marjoram, paprika, pepper
 
2 tsp salt

Directions

Place beef in large kettle; cover with 2 qt. (2 L) water.
Bring to a boil, cover and cook 2 hours, or until meat is tender.
Add remaining ingredients; simmer I hour.
Remove beef; strain broth.
Refrigerate broth overnight.
Remove all fat from surface before reheating broth.
