Beef Broth Recipe
Ingredients
2 1/2 pounds cut up beef shanks
2 quarts water
1 carrot, cut into eighths
1 onion, quartered
2 stalks celery
2 cloves garlic
1 bay leaf
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dried whole thyme
Directions
Place beef in a 13 x 9 x 2 inch pan; bake at 400° for 20 minutes.
Transfer beef and drippings to a large Dutch oven; add remaining ingredients.
Bring to a boil; cover, reduce heat, and simmer 1 1/2 to 2 hours.
Strain broth, reserving meat and vegetables for other uses.
Chill broth; remove fat from surface of broth.
