Sirloin steak-2 1/2 pounds -cut 1/4-inch thick
Oil-2 tablespoons
Coconut milk-3 cups
Shrimp or anchovy paste-1 tablespoon
Sugar-1 teaspoon
Chili peppers-3/4 teaspoon -dried ground
Peanuts-3/4 cup -ground
Garlic cloves-4 minced
Shallots or onions-1/2 cup-chopped
Lemon rind-2 teaspoons-grated
Flour-2 tablespoons
Heavy cream-1/4 cup
Water chestnuts-2 cups -sliced, undrained
Directions
GETTING READY
1. Cut the meat into 3-inch squares and set aside till required
MAKING
2. In a large saucepan, heat the oil. Add the meat to the pan and lightly brown it
3. Add the coconut milk, anchovy paste, sugar, and the coconut milk to the pan and cook this mixture over low heat for 30 minutes
4. In a large mortar, use a pestle to pound the chili peppers, peanuts, garlic, shallots and the lemon rind to a smooth paste. Add this paste to the saucepan.
5. In another bowl, add the flour and the cream and mix well. Add this mixture to the saucepan and boil on low heat till it reaches boiling point.
6. Cook this mixture for five minutes more
7. In another saucepan, cook the water chestnuts in their own liquid for five minutes. Drain and set aside
FINALIZING
8. On a serving platter, arrange the meat and the water chestnuts.
9. Pour the sauce over the top
