Ingredients
1 pound beef top round steak, cut into 1 1/2 inch chunks
1 medium-sized onion, cut into quarters and separated into pieces
3 tablespoons soy sauce
1 tablespoon dry sherry
1 tablespoon salad oil
1 tablespoon chili sauce
1/4 teaspoon ground ginger
1 medium-sized zucchini
1 medium-sized yellow straightneck squash
1 medium-sized red or green pepper
1/2 pound medium-sized mushrooms
1/4 cup bottled Italian dressing
Directions
1. In medium-sized bowl, mix first 7 ingredients. Cover mixture and refrigerate at least 2 hours, stirring occasionally.
2. About 1 hour before serving, prepare outdoor grill for barbecuing.
3. Cut zucchini and yellow squash into 1-inch chunks. Cut red pepper into 1-inch pieces. On 2 long skewers, alternately thread zucchini, yellow squash, pepper, and mushrooms. On 2 more skewers, alternately thread beef chunks and onion, reserving marinade.
4. Place vegetable and meat skewers on grill over medium heat; cook about 10 minutes, brushing vegetables with Italian dressing and meat with reserved marinade frequently and turning skewers occasionally, until vegetables are tender and meat is of desired doneness.
