Beef And Beans Recipe
Ingredients
2 1/2 lbs. lean stewing beef, cut in 1-inch cubes
2 large onions, chopped
Salt to taste
Freshly-ground pepper
1 lb. smoked sausage, cut in 1-inch pieces
2 cups sprouted kidney beans, not steamed
1 cup dry red wine
2 cups beef bouillon
1 clove garlic, minced
1/2 tsp. thyme
1 bay leaf
Grated rind of 1/2 lemon
2 tbsp. brandy
3 tbsp. chopped parsley
Directions
Preheat oven to 325°.
In large 3-qt.casserole put beef, onions, salt and pepper.
Cover and place in oven.
Cook for 1 hour.
Add remaining ingredients except brandy and parsley.
Cover and cook for 1/2-2 hours until meat and sprouts are tender.
