Bechamel Sauce Recipe

Ingredients

 
1/4 c. butter
 
2 tbsp. chopped onion
 
1/2 c. flour
 
2 c. milk
 
2 c. stock
 
Pinch of thyme
 
Dash of white pepper
 
Pinch of freshly grated nutmeg

Directions

Melt butter in double boiler over low heat.
Saute onion in butter until transparent.
Blend in flour; add milk and stock gradually.
Place over hot water; add thyme, pepper and nutmeg.
Cook for 1 hour, stirring frequently.
Strain sauce through fine sieve.
