Bechamel Sauce Recipe

Ingredients

| Carrot | 1 | |
| Stalk celery | 1/2 | |
| Onion | 1 | |
| Bay leaf | 1 | |
| Peppercorns - few | ||
| Butter | 2 Tablespoon | |
| All purpose flour | 1/4 Cup (16 tbs) | |
| Nutmeg | ||
| Salt | 1 To taste | |
| Pepper white | 1 | |
Directions
MAKING
1 In a pan, add milk along with the carrot, celery, onion, bay leaf, and peppercorns.
2 Gradually bring to a boil.
3 Remove from the heat and discard the vegetables.
4 In a small pan, melt the butter.
5 Add in the flour and stir for 1 to 2 minutes.
6 Gradually add in the flavored milk, stirring constantly.
7 Bring to a boil, stirring all the time.
8 Cook for about 2 minutes, until thick.
9 Season with nutmeg, salt and white pepper.
SERVING
10 Use the sauce for coating vegetables, particularly prior to browning in the oven or under the broiler in gratin dishes.
