Ingredients

 
1/2 cup butter or margarine
 
1/4 cup water or dry white wine
 
3 tablespoons tarragon or cider vinegar
 
2 teaspoons finely chopped onions or shallots
 
1/4 teaspoon salt
 
Dash of pepper
 
3 egg yolks
 
1/2 cup mayonnaise or salad dressing

Directions

Combine first 7 ingredients in container of an electric blender, if available.
Whiz until ingredients are finely chopped.
If no blender is available beat with wire whisk or beater until light and fluffy.
Pour into blazer pan of small chafing dish or metal fondue pot over direct low flame.
Cook, stirring until mixture thickens.
Remove from heat and stir in mayonnaise or salad dressing.
