Beans And Side Dishes Recipe
Ingredients
| Navy beans | 1 pound, dried | |
| Water | 6 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| 1 pound beef, cut in 3/4-inch cubes | ||
| Butter | 2 Tablespoon | |
| Flour | 2 Tablespoon | |
| 2 cups drained piccalilli | ||
| Bacon | 1/2 pound, sliced | |
| Onions | 4 , sliced | |
| 1/4 cup bacon drippings | ||
Directions
Soak beans in 3 cups water for 8 hours, or overnight.
Drain add 2 teaspoons salt and 2 cups water.
Cover.
Cook for 2 hours, or until tender; brown beef in butter; blend in flour; add 1 cup water and 1 cup piccalilli; cover.
Simmer for 1 1/2 hours, or until meat is tender, fry bacon until crisp.
Remove.
Reserve saute sliced onions in drippings until tender and brown.
Serve beans in individual bowls, serve meat and accompaniments, (bacon, fried onions, sliced gherkins, additional piccalilli, and cocktail onions) in individual side dishes
