Ingredients

 
1 cup kidney beans
 
1 onion
 
2 garlic cloves
 
2 teaspoons salt
 
1/3 cup oil
 
2 cups cooked rice
 
1/2 cup beef broth
 
1/4 teaspoon dried ground chili peppers

Directions

Wash the beans and cover with water.
Bring to a boil, remove from heat and let soak 1 hour.
Add the onion, garlic, and salt.
Bring to a boil again, cover and cook over low heat 1 1/2 hours, or until very tender.
Force the undrained beans through a sieve or puree in an electric blender.
Heat the oil in a skillet; add the pureed beans and cook over low heat 5 minutes, stirring frequently.
Stir in the rice, broth, and chili peppers.
Cook 5 minutes.
Taste for seasoning.
