Beans A La Charente Recipe

1 pound dried white beans
1 onion studded with two cloves
1 clove garlic
1/2 teaspoon thyme
1 bay leaf
1/4 cup (one-half stick) butter
3/4 cup chopped onion
2 cups tomato puree
1/4 cup chopped parsley
2 teaspoons salt, or to taste
1/4 cup cognac
Directions
Soak the beans overnight in water to cover.
Or boil two minutes, cover and let stand one hour.
Add the onion studded with cloves, garlic, thyme and bay leaf to the beans.
Bring to a boil and simmer until the beans are tender, one to three hours.
Drain the beans but reserve one cup of the cooking liquid.
Discard the onion, garlic and bay leaf.
Melt the butter and cook the chopped onion in it until tender.
Add the tomato puree, parsley, salt, cognac and reserved bean liquid.
Simmer thirty minutes, then combine with the beans.
Bring to a boil and serve hot.
