Beans And Rice Recipe
Ingredients
| Olive oil | 2 Teaspoon | |
| Garlic | 2 Clove (5gm), finely chopped | |
| Onion | 1 Small, chopped | |
| Cayenne pepper | 1/4 Teaspoon | |
| Cumin | 1/4 Teaspoon | |
| Red wine vinegar | 1 Teaspoon | |
| 2 cups prepared red kidney or black beans, rinsed and drained | ||
| 1-2 cups water or chicken or vegetable stock | ||
| Salt | To Taste | |
| 3-4 cups white or brown rice, cooked | ||
Directions
1. Heat a large skillet over medium4ow heat and add oil. When the oil is hot, add the garlic and onion and saute for about 10 minutes, or until the onion is golden.
2. Reduce heat to low, add the spices, vinegar, beans, water or stock and cook for about 20 minutes, or until the beans become very soft. Add salt to taste.
