Ingredients

 Olive oil2 Teaspoon
 Garlic2 Clove (5gm), finely chopped
 Onion1 Small, chopped
 Cayenne pepper1/4 Teaspoon
 Cumin1/4 Teaspoon
 Red wine vinegar1 Teaspoon
 2 cups prepared red kidney or black beans, rinsed and drained
 1-2 cups water or chicken or vegetable stock
 Salt To Taste
 3-4 cups white or brown rice, cooked

Directions

1. Heat a large skillet over medium4ow heat and add oil. When the oil is hot, add the garlic and onion and saute for about 10 minutes, or until the onion is golden.
2. Reduce heat to low, add the spices, vinegar, beans, water or stock and cook for about 20 minutes, or until the beans become very soft. Add salt to taste.
