3 qts (2.9 1) water
3 lbs (1.4 kg) fresh green escarole, washed
1 garlic clove, chopped
4 tbs (60 ml) olive oil
14-oz can (420 g) Organic Great Northern Beans, rinsed, reserve liquid sea salt, to taste pepper, to taste
Directions
Bring water to a boil and drop in washed escarole.
Cook until tender.
Drain in a colander.
In medium-large saucepan, saute garlic in olive oil until garlic turns light brown.
Add greens to pan and saute for 10 minutes.
Add rinsed beans and 1/2 cup bean liquid and simmer for another 10 minutes.
Season with sea salt and pepper to taste.
