Bean Soup With Frankfurters Recipe
Ingredients
1 pound dried great northern or navy beans
7 or 8 cups water
1 carrot diced
1 stalk celery with leaves diced
1 large onion chopped
2 teaspoons salt
1/4 teaspoon pepper
2 or 3 frankfurters sliced
2 tablespoons fresh parsley leaves chopped
Directions
Soak beans overnight in water in the slow cooker.
Do not drain.
Cover and cook on high about 3 hours, until tender.
Add vegetables and seasonings.
Cover and cook oh low 10 to 12 hours.
Add frankfurters the last 30 minutes of cooking.
Stir to mash some of the beans and thicken the soup.
Serve hot, garnished with fresh parsley
