Bean Curd Cheese Recipe

Ingredients
4 squares bean curd
4 cups water
2 tablespoons salt
1 cup sherry
1 teaspoon salt
Directions
Cut the bean curds into lxlx1/2 inch pieces and soak in water and salt for 2 days.
Remove from the water and when curds are well drained, place in the sun for 2 days to dry.
Arrange carefully in a deep bowl and set aside.
Place a rack in a deep saucepan filled up to 2 inches of water; place the bowl on the rack and steam for 20 minutes.
Remove the curds carefully to a bottle, fill with sherry and salt and cover tightly.
Let the bottle stand in the sun another day, and then let it mature at room temperature from 3 to 6 months, the longer the better.
