1 pound pork sausage
2 medium stalks celery, sliced (about 1 cup)

2 cups cooked brown or regular rice
1 can (15 ounces) kidney beans, drained
1 can (16 ounces) whole tomatoes, undrained
1 teaspoon dried" oregano leaves
1 teaspoon salt
1/2 teaspoon dried savory leaves
1/4 teaspoon pepper
1/2 teaspoon red pepper sauce
1 cup shredded Monterey Jack cheese
Directions
Cook and stir sausage, celery and onion in 10-inch skillet over medium heat until sausage is brown, 10 to 15 minutes; drain.
Stir in remaining ingredients except cheese.
Break up tomatoes with fork.
Pour mixture into un-greased 2-quart casserole.
Cook uncovered in 350° oven 30 minutes; sprinkle with cheese.
Cook uncovered until cheese is melted, about 5 minutes longer.
